Random fact of the day…My most popular blog post to date…is one from 8 YEARS AGO. I am not even kidding. There is a recipe I posted for a Coconut Cake that is the most viewed blog post (daily!). And I’m not talking a few more hits…Im talking in the thousands. I’m going to thank pinterest. Not even sure how its getting pushed around and still getting views. But somehow that is what is happening. I find it slightly funny that this is a blog mostly about my photography adventures and yet that is still my most popular post. It also tells me that maybe you guys really do like the random in between posts. Those about my life and random kid bits I find fun. But let’s see. I’m going to test that theory and see how this post does. I have posted this in the past but I pulled out the recipe today and made another batch. I forgot just how delicious these muffins are! They are heaven. And you will LOVE them. You know how I know that? Cause I don’t even like blueberries and I can eat these ALL DAY LONG. So trust me. Give them a whirl. You will not regret it.

I will not even begin to claim this recipe. So please visit the original post from allrecepies.com to see it in all its glory. I will share it here too WITH my small modifications.

Ingredients for muffins:
1 1/2 cups Flour
3/4 Cup White Sugar
1/2 tsp Salt
2 tsp baking soda
1 tsp ground cinnamon*
1/3 cup vegetable oil
1 egg
1/3 cup milk
1 cup fresh blueberries

For topping:
1/2 Brown Sugar*
1/3 cup flour
1/4 cup salted butter cubed
1 1/2 tsp ground cinnamon
1/4 crushed pecans (opt)*

Pre-heat oven to 400 degrees
Grease muffin tin or use liners

1. Combine flour, sugar, salt, baking powder, cinnamon in a bowl.
Put vegetable oil in a 1 cup measuring cup, add the egg and then add milk until you are at 1 cup.
Mix with dry ingredients.

Gently fold in blueberries.

TOPPING:
2. Add all topping ingredients to a bowl and mix with a fork. It should be crumbly. (You can add pecans to taste. I actually sprinkled mine on top after adding the topping. They are DELISH).

3. Add muffin mix to your muffin tin. Fill 3/4 full.

4. Sprinkle your topping on top of muffins.

5. Bake for 20-25 minutes or until your toothpick comes out clean.

Let cool before eating! Those blueberries can burn your mouth! (ask me how I know! LOL)
